3 small peaches, sliced

2 tbsp granulated white sugar

2 tbsp lemon juice

1 tbsp cornstarch

⅔ cup oats

½ cup brown sugar

¼ cup all purpose flour

¼ cup butter, melted

¼ tsp ground cinnamon

Directions
- Preheat the oven to 375 degrees Fahrenheit.
- Mix the sliced peaches with the white sugar, cornstarch, and lemon juice. Divide between two small baking dishes or skillets.
- Mix the oats, brown sugar, flour, melted butter, cinnamon, and salt until well combined and chunky. Divide between the two baking dishes, placing on top of the peaches.
- Transfer the baking dishes to the oven and bake for 25--30 minutes or until the oat mixture is golden brown and the liquid at the sides of the dish is bubbling.
- Remove and let cool for 5-10 minutes before serving with the vanilla pudding dolloped on top!
