Mini Baked Peach Crumbles


  • 3 small peaches, sliced
  • 2 tbsp granulated white sugar
  • 2 tbsp lemon juice
  • 1 tbsp cornstarch
  • ⅔ cup oats
  • ½ cup brown sugar
  • ¼ cup all purpose flour
  • ¼ cup butter, melted
  • ¼ tsp ground cinnamon
  • Pinch salt
  • Zen Coconut Milk Vanilla Pudding


  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Mix the sliced peaches with the white sugar, cornstarch, and lemon juice. Divide between two small baking dishes or skillets.
  3. Mix the oats, brown sugar, flour, melted butter, cinnamon, and salt until well combined and chunky. Divide between the two baking dishes, placing on top of the peaches.
  4. Transfer the baking dishes to the oven and bake for 25--30 minutes or until the oat mixture is golden brown and the liquid at the sides of the dish is bubbling.
  5. Remove and let cool for 5-10 minutes before serving with the vanilla pudding dolloped on top!
