Carrot Cake Trifle

Ingredients - makes 2

  • Premade carrot cake of choice
  • Zen Coconut Milk Vanilla Pudding, to layer
  • Shredded coconut, to top
  • Walnut pieces, to top


  1. Cut the cake into 1-2 inch pieces.
  2. Place some of the cake in a layer at the bottom of a wide glass or other serving dish. Follow with a layer of vanilla pudding. Follow with another layer of cake pieces and another layer of pudding.
  3. Top with shredded coconut and nuts or other toppings as desired. Chill until ready to serve.
